This has been the gastronomic news of the year: after Jean-François Piège, it’s the young prodigy Christopher Hache (ex Bristol and Grande Cascade) who took over the restaurant of the palace, Les Ambassadeurs. A bold bet for Le Crillon which seems to pay off because the 28 years chef managed to put together an exhilarating menu in the enchanting place on the place de la Concorde. Tagliatelle with raw asparagus, cooked in salted butter or morels stuffed with Iberian ham, hazelnut mousse, cooked foie gras enhanced with basil or Ormeau with its pea and bean puree and slight hint of ginger, banana ice, crunchy hazelnut and "jivara" mousse: the ultimate place for gourmets to enjoy the richness and the conviviality of this cuisine à la Hache in a superb setting.
